'Tis the season for eggs and I made you an Avocado Egg Salad Sandwich.

Ingredients:
this recipe makes 4 sandwiches
6 hard boiled eggs, peeled
5 TBS mayo (I use lite mayo)
1 TBS Dijon mustard
2 TBS dill pickle relish or sweet relish
1 small celery stalk (close to the heart), finely chopped
1 TBS shallot, finely chopped
fresh lemon juice (to taste)
paprika (to taste)
garlic and herb seasoning (to taste)
salt and pepper (to taste)
8 toasted bread slices
1 large avocado, thinly sliced
On a large dinner plate, mash hard boil eggs with a fork until fluffy. Then add smashed eggs to a medium size bowl. Then add mayo, mustard, pickle relish, celery, shallot, squeeze of fresh lemon juice, and seasonings. Mix well and spread the egg salad on a toasted bread slice, add sliced avocados, and then top with an additional slice of toasted bread.

Cucumber, Tomato & Feta Salad
Over the holidays I made this lovely cucumber, tomato, and feta salad. This salad was such a hit with the family that I will be making this very often in my kitchen. Serve with your favorite crackers or pita bread. This would also make a great topper for hummus!
cherry tomatoes, quartered
pickling cucumbers or salad cucumbers, quartered and diced
1 yellow bell pepper, diced
Greek kalamata olives, chopped
crumbled feta cheese (I used a tomato basil feta in this batch)
salt and pepper (to taste)
fresh lemon juice (to taste)
Mix all ingredients together and serve immediately or refrigerate.
This is such a wonderful snack or a light lunch option.

Turkey Cranberry Salad
What to do with all the turkey leftovers?
Make Turkey Cranberry Salad, of course!
Ingredients:
*I used the leftovers of my Breast of Turkey Roast, click here for the recipe. This is my first recipe for Turkey Cranberry Salad, but next time I am going to omit the pickle relish and add fresh parsley.
2 cups shredded or cubed turkey
1/2 cup dried cranberries
3 TBS purple onion finely chopped
2 tsp dijon mustard
1 celery stalk finely chopped
3 heaping TBS sweet pickle relish (optional)
1 hard boiled egg, smashed well
2/3 cup of light mayo
juice of 1 lemon
salt and pepper to taste
Add all ingredients to a medium bowl and mix well. Serve immediately or refrigerate.
Enjoy!

Grilled Romaine Hearts with Spiced Rubbed Grilled Chicken
Fall is my favorite season, and I am so excited it's just around the corner! I love the colors of fall and the aroma of spices that fill my kitchen each year. I must warn you I also love pumpkin too. My daughter and I have already made two pumpkin pies and one pecan pie! I told her we had to stop, so we can enjoy all these flavors throughout the holidays. We just couldn't wait...pumpkin fever!
Back to romaine lettuce...I love grilling romaine lettuce and it especially pairs well with this Spice Rubbed Grilled Chicken I found over at
The Fountain Avenue Kitchen!
It was no surprise this recipe was a big hit with the family. Everyone loved the warmness of the grilled romaine lettuce and the spices of the rub. Then Ann's Everything Sauce brought all the flavors together! This was a perfect fall salad and I hope you will be able to enjoy this recipe soon.
Grilling romaine hearts is so easy and it brings new flavors everyone will enjoy!
Ingredients:
3 romaine hearts
3 TBS Extra Virgin
Olive Oil
salt and pepper (to taste)
1 tsp Italian seasoning
1 TBS vinegar (your choice of vinegar)
I did not add vinegar to this batch because I drizzled Ann's Everything Sauce over the salad!
First mix olive oil, vinegar and seasonings together.
Strip any bad leaves and wash and dry your romaine hearts. Then cut about an inch off the tips.
Then clean the brown ends leaving the root intact.
Next, brush olive oil mixture over the romaine hearts covering all sides. Then place romaine hearts on a hot grill. Turn often until each side is nicely charred and slightly wilted.
Chop grilled lettuce and serve with Ann's Spice Rubbed Grilled Chicken and Everything Sauce, click here for the recipe. This meal was also severed with
Rice Select Royal Blend
Ingredients:
2 cups Royal Blend
3 cups low sodium chicken broth
2 tsp butter
1/2 teaspoon salt
1/2 tsp garlic and herb seasoning
Combine broth, rice blend, salt, seasoning, and butter in a medium saucepan. Bring to a boil. Cover with tight fitting lid; reduce heat and simmer for 15 minutes. Remove from heat and allow to stand for 5 to 10 minutes. Fluff with fork.

Homemade Ranch Dressing
I will be honest I have never made homemade ranch dressing until recently! One of my good foodie friends, The Fountain Avenue Kitchen, did a guest post for me this summer and posted her recipe for Better for You Ranch Dressing, check out the original recipe here! I quickly tried Ann's recipe and it was amazing! I then ran out of chives in my garden because all my kiddos loved it and I was making this dressing daily! After I had made Ann's dressing a few times and then ran out of chives, I was inspired to add a few ingredients of my own. I would love to share this recipe with you because it is such a big hit around this kitchen! Homemade Ranch Dressing
6 TBS nonfat plain Greek yogurt
6 TBS low fat mayo (I use Kraft Mayo made with olive oil)
2 TBS finely chopped chives or 2 tsp dried chopped chives
2 TBS finely copped Italian parsley or 2 tsp dried parsley flakes
2 TBS tarragon vinegar
2/3 cup low fat buttermilk
1 tsp garlic and herb seasoning
1 tsp kosher salt (or to taste)
1/2 tsp fresh ground pepper (or to taste)
Add all ingredients to a pint size mason jar, seal, and shake to mix well, or blend all ingredients in a blender. Store in refrigerator; I let all my flavors marinate overnight. Serve over salad or as a veggie dip. Enjoy!

Cool Cucumber Sub
The first time I saw a cucumber sub was of course on Pinterest!

I thought it was such a cute and light lunch option! I quickly had to try one and then tell you about how fun it was to make! I will admit it is a bit slippery if you peel the skin, but if you are looking to cut those carbs this is a wonderful idea! My older kids loved this idea and it will definitely be going in their lunch boxes this year :) My younger one could not keep it in his hands and decided to eat his open faced. Either way it was a healthy lunch everyone enjoyed!
There are so many options, so do not stop at my ingredient list! Hummus, egg salad, and tuna salad would be another great option in these subs!
What's in my sub...
English cucumbers
deli turkey
crispy turkey bacon
chopped tomatoes
low fat cream cheese, softened and seasoned with a sprinkle of garlic and herb seasoning
a few turns of fresh ground pepper
I served this lunch with hummus chips!
First wash and seed an English cucumber. You can leave the skin on, but I chose to slightly peel mine!
Then fill one cucumber half with soften cream cheese and then placed the turkey, turkey bacon, tomatoes, on top of the cream cheese. Close with the other half of the cucumber and you have a cool, low calorie lunch!

Tomato Basil and Mozzarella Salad
The one thing I love about this time of year is all the summer vegetables that arrive. I grew up with a grandmother that search for the very best garden vegetables one could find. If she could not grow it, she found someone who did. My grandmother bought peas by the bushel and I found peace and comfort in shelling peas with her each summer.
As a child, summer dinners often consisted of a large garden tomato, fresh fried okra, and a bowl of cream peas.
How can you beat that!
As you can see I have always had a love for summer vegetables. I will be posting a great number of vegetable dishes this summer so stay tuned!
Today I am sharing a favorite lunch of mine. Who's kidding, sometimes I have this for dinner too! A few day ago I picked my first bunch of sweet cherry tomatoes out of my garden and had to make this salad. If you have never put paired these ingredients together, please do!
The best thing about salads is no measuring is required!
All you need is:
cherry tomatoes (halved)
a salad cucumber (sliced, I use pickling cucumbers)
a few sprigs of fresh basil
Mozzarella Pearls
Extra Virgin Olive Oil (for drizzling)
kosher salt and fresh ground pepper (to taste)
Mix well and enjoy!

Must Try Monday {Creamy Italian Vinaigrette}
Hello everyone! Sorry I missed last week, but I was super busy with the family. I know all you Mamas out there know how that goes! No worries, I am back reviewing another Pinterest pin.
Today's feature comes from The Big Red Kitchen.
The best thing about blogging and pinning is I have found so many new blogging friends through Pinterest!
I have actually made this vinaigrette several times and it lives up to all my family's expectations each time! I followed the recipe exact, but next time I am going to try honey in the place of sugar. This recipe is suppose to be copy cat recipe of Olive Garden's house dressing or not. I have only been to Olive Garden a few times and it has been so long ago I could not even begin to tell you how their house dressing taste.
I am a salad lover and enjoy a variety of salad dressings. This recipe is definitely a keeper for my cool salads!
