A strawberry salad tossed with Strawberry Balsamic Vinaigrette topped with toasted pecans makes for a wonderful summer salad!
How to make:
Strawberry Balsamic Vinaigrette
Adapted from: Whole Foods Market
1 cup sliced strawberries
1/4 cup balsamic vinegar
1 tsp dijon mustard
2 TBS olive Oil
1/2 shallot, chopped
1/2 tsp thyme (or 2 tsp fresh thyme, I often use lemon thyme)
1/4 tsp fresh ground pepper
1/8 tsp (or a dash) of kosher salt
1 TBS honey
(add a little more if needed, depends on the sweetness of the strawberries)

Add all ingredients to the blender and blend for a few seconds and you have a wonderful homemade dressing. For the salad greens I used fresh romaine and baby spinach!

Mix chopped pecans and butter until evenly coated, then spread pecans on a cookie sheet lined with parchment paper.
Bake at 350 for about 10 min or until toasty!
