These veggie burgers are so good and full of flavor. A scrumptious, healthy alternative to the original hamburger that has your mouth watering. I have wanted to share this recipe with you for quite sometime and finally got around to it! This is definitely a family favorite. I know you are ready for the recipe so let’s get started…
makes 8 evenly sized patties
1 1/2 cup of cooked and mashed sweet potatoes (2-3 sweet potatoes)
1/2 cup canned black beans, drained and rinsed
1/2 cup cooked quinoa (I cook mine in veggie broth for added flavor)
1/2 cup oat flour, click here to make your own
1/3 cup sweet frozen corn
2 green onions, including the green parts, finely chopped
2 TBS red bell pepper, chopped
2 TBS cilantro, finely chopped
*1/4 tsp chipotle chili powder (see bottom note)
1/2 tsp cumin
1 tsp oregano
1/4 tsp kosher salt
pepper to taste
1 1/2 TBS olive oil
Bake sweet potatoes at 350 degrees on a baking sheet covered in foil until tender and soft. After potatoes cool, peel skin and mash with fork. Place in a large bowl and add all other ingredients except oil, mix well.
Once you have mixed in everything, mold 8 evenly sized veggie patties and place on wax paper or parchment paper for easy removal.
Now, heat olive oil evenly in a 10 inch iron or a non stick skillet over medium to medium high heat.
You are ready to serve your veggie burgers. Present on a bun or serve bunless, either way is a delicious choice.
This cilantro lime sour cream compliments these burgers very well, give it a try!
Cilantro Lime Sour Cream
8 oz light sour cream
juice of 1 lime
zest 1/2 lime
1 TBS chopped cilantro (add more if you like)
1/4 chili powder
salt to taste
Mix all ingredients and dollop over a veggie burger patty!
*Tip - Chipotle chili powder has a little kick to it, medium heat. May add more to taste for added spice. A 1/2 tsp (or to taste) of regular chili powder can be substituted in place of chipotle chili powder.
